Lunchbox Energy Bars (GF, DF, RSF & Paleo)

Healthy lunchbox snacks can really throw you for a loop with all of the products out there on the market these days. There's nothing worse thank taking home what you think is a healthy and nutritious snack for your child, only to discover it's actually laden with processed sugars and artificial ingredients.

N&T Co-Founder and Nutritionist, Sara, has two busy children who are full of energy and always on the go. To keep up with their hobbies, Sara of course always has nutrition at the forefront of her mind and is constantly coming up with ways to fill them with quality whole foods, that keep them going throughout their day. Whether its at school or their after school activities, these delicious Lunchbox Bars are filled with all of the goodness and just enough sweetness to keep the kids happy!

Paleo Lunchbox Energy Bars

You'll need:










Preheat your oven to 150c and line a square brownie tin with baking paper.

In a medium bowl mix together all of your nuts and seeds then set aside. In a small saucepan, mix together coconut sugar, honey, salt, cinnamon and vanilla over a medium heat until combined and the sugar has dissolved. Be careful not to overcook the coconut sugar!

Quickly pour over your nut mixture, stirring well to combine and working quickly before the sugar sets. Press the sticky mixture into the lined tin.

Place in the oven to cook for 20 minutes. After 20 minutes has elapsed, remove the slice from the oven and let it cool for one hour.

Melt your chocolate chips in a small jug in the microwave in 30 second bursts. Stir until smooth, then drizzle over the slice. Refrigerate until set, then slice into 12.

Store in the fridge and enjoy!

    Holy moly – these are delicious! I’ve made these a couple of times and these go down such a treat with my children. Instead of cutting these into 12 bars, I get them into 24 little squares, which I think works out to around 4g of unrefined sugar. Considering most store-bought muesli bars have easily double the sugar content (and its often highly refined sugar), I think this is pretty good.
